Hiyu Floréal Cider

Hiyu Wine Farm’s apple wine, only on its fourth release, derives from a mix of 80 different cider and dessert apple varieties grown on a 60-acre biodynamic orchard, with which Hiyu has a co-operative working arrangement. One of the wilder wines made of apples we know of: fuller-bodied, leesy, distinctly smoky, as well as being dry and lightly oxidative. We love it but it’s not for the faint of heart; this one isn’t like your upstate NY ciders that smell like caramel and red apple skin. Pair with polenta, sausage, fried onions.
